What this solves

The Wursttheke has 1,500+ registered varieties (Deutscher Fleischer-Verband, 2026 register). At the Wirtshaus counter you see ~11 categories. The most common mis-import is presenting them all as "Bratwurst" — they are not: a Nürnberger Rostbratwurst is marjoram-flavoured, a Thüringer is cumin-led, a Fränkische is heavier and parsley-led, a Schwäbische is fine-spiced and often longer.

The Weisswurst-before-noon rule is the most-asked question. The reason is mechanical: Weisswurst is a parboiled veal-pork sausage in a thin sheep casing. It was traditionally made without refrigeration, so it had to be eaten the morning it was made (the casing would split overnight). The modern rule "Weisswurst should be eaten before the noon church bells" is a cultural fossil of that practical limit. Eating it after noon is fine — the casing has been preserved since.

Currywurst is Berlin's signature Imbask and the most common "what should I eat first" answer. The original site is disputed: Herta Heuwer's Imbiss at Kantstraße 36 (now Curry 36) opened 1949; a competing claim is from the same year at Kantstraße 61. The decoder tells you both.

Is Weisswurst actually a sausage or a different thing?

It is a sausage (Brühwurst = parboiled sausage). The traditional recipe uses veal, pork back bacon, parsley, lemon, mace, cardamom, ginger. It is boiled in water (not grilled) and the casing should be pulled off (the "Aus zuzeln" rule). Eating it after noon is allowed — the casing has been preserved for 70+ years.

Curry 36 vs Curry 61 — which is the original?

Both claim 1949. Herta Heuwer opened at Kantstraße 36 in September 1949 and trademarked "Chillup" in 1951; the competing claim is from the same year at Kantstraße 61 (today's Curry 61). Berliners are split. Curry 36 has the bigger queue and the multi-location expansion; Curry 61 stays the original one-counter shop. Either is canonical.

Why is a Nürnberger Rostbratwurst so small?

The protected-designation (g.U. / EU g.t.S. since 2003) rules: a Nürnberger Rostbratwurst must be 7-9 cm long, weigh 20-25g, made from pork with marjoram. They are cooked 3, 6, or 12 at a time over a beech-wood grill. The serving "3 im Weggla" = 3 sausages in a Brötchen. They come from Nürnberg only — elsewhere it is "Nuernberger Art" (style of).

What is Leberkäse if there's no cheese in it?

The "Käse" is a leftover from the Old High German word for the cooking form (Käserei = a cheese-press square form). The Leberkäse is a meatloaf (Beef + pork + bacon, ground fine, baked in a square form) — no liver in the modern version, no cheese. Bavarian / Franconian Mittag staple, sliced and eaten in a Semmel (Leberkäs-Semmel).
